Serves: 2 Time: 60 minutes
2 egg whites
120g caster sugar
500g strawberries (or other berry of choice)
450ml double cream
1 tbsp icing sugar
- Heat oven to 120C
- Whisk egg whites in a bowl, slowly mixing in sugar
- Spoon mixture onto a baking tray covered with parchment paper and bake for 60 minutes
- Puree 1/3 of the strawberries and add to a bowl with the icing sugar.
- Crush meringues and add to the strawberry mixture, mix together. Then add remaining meringues by crushing and sprinkling on top and serve.
