Leftover Roast Chicken Casserole

Ingredients:

  • Roast Chicken leftovers
  • Extra veg
  • Chicken casserole packet mix e.g. Schwartz/Colman’s.
  • 2tbsp olive oil for frying.

 

Method:
Pan fry chicken just to warm through

Par-boil veg for 5 mins

Put it all in one pot (preferably with a lid).

Make up packet mix and pour over.

Put in oven for 1.5 hours at 120C

And then serve/eat!  Rather scrumptious actually.

Honey Flapjack

Ingredients:

  • 200g unsalted butter
  • 200g brown sugar
  • 200g honey
  • 400g porridge oats
  • 50g dried fruit (optional)

 

Method:

Heat oven to 180C and grease and line a baking tin.

Melt butter, sugar and honey in big saucepan and then remove from heat. Stir in the oats (and fruit) before pouring into the tin, aim for 2cm thickness.

Bake for 20 mins and then cool completely before eating – although flapjacks warm are mighty tasty.
