Omelette Muffins (Co-operative Food Magazine)

Ingredients:

4 eggs

50g cheese

40g ham/bacon

100g green beans /mushrooms/tomatoes

3tbsp milk

Method:

Line muffin tin with drops of oil.

Stir fry the meat and/or veg filling.

Mix eggs, milk and half the cheese in a jug.

Add meat/veg to contents of the veg. Mix and pour into muffin tin.

Sprinkle rest of cheese on the top.

Bake for 15-20 mins at 170C
