Moroccan Chickpea and Sweet Potato Salad

You can make a green salad at home in 5 minutes, armed with only a few quid of pre-washed salad greens, a pack of chickpeas and other veggies, plus a bottle of light salad dressing or you can make style it your own way by trying something new….feel free to experiment.

Delicious flavorsome Moroccan chickpeas and sweet potato salad


Duration:30 minutes


  • 1 sachet Tomato flavoured couscous or any flavour of your choice
  • A tin of chickpeas
  • 2 sweet potatoes – peeled and chopped into bite-sized pieces
  • 1 pomegranate
  • 1 Red onion – peeled and chopped into wedges
  • A few cherry tomatoes
  • 1 cucumber


Other Optional Ingredients

  • 50 g Feta cheese
  • Olives
