Try out this delicious Spanish dish an evening this week for a healthy and filling meal!

Serves: 4                            Time: 50 minutes

Ingredients:

3 tbsp olive oil

1 large potato, peeled and thinly sliced

1 onion, thinly sliced

1 red bell pepper, seeded, sliced

1 tsp thyme

6 eggs

1/2 cup grated Parmesan cheese

2 tablespoons parsley

2 tablespoons drained capers

 Method:

  1. In skillet, combine olive oil, 1/2 potato, onion, thyme, and pepper. Add salt and pepper to personal preference. Cover and let simmer until vegetables are soft.
  2. Whisk eggs in bowl. Add potato mixture to eggs and mix thoroughly.
  3. On clean skillet, pour mixture and add cheese. Cover for about 10 minutes or until eggs are set.
  4. When finished, slide onto platter. Sprinkle parsely and capers on top, cut into wed
