Try out this delicious Spanish dish an evening this week for a healthy and filling meal!
Serves: 4 Time: 50 minutes
3 tbsp olive oil
1 large potato, peeled and thinly sliced
1 onion, thinly sliced
1 red bell pepper, seeded, sliced
1 tsp thyme
1/2 cup grated Parmesan cheese
2 tablespoons parsley
2 tablespoons drained capers
- In skillet, combine olive oil, 1/2 potato, onion, thyme, and pepper. Add salt and pepper to personal preference. Cover and let simmer until vegetables are soft.
- Whisk eggs in bowl. Add potato mixture to eggs and mix thoroughly.
- On clean skillet, pour mixture and add cheese. Cover for about 10 minutes or until eggs are set.
- When finished, slide onto platter. Sprinkle parsely and capers on top, cut into wed
